It's tricky alright, I hope to see that the interviewee knows their CV and can answer questions on it. It is pretty easy to see if it's been generated by AI.

With a cover letter I'm looking for something interesting about the applicant which shows their drive, curiosity, and personality. It's not a requirement at all but it's informative to read and shows that bit of extra effort and adds colour to an application.

Neither are a replacement for just having a conversation though.
